Turtle Cheesecake

here’s a treat from the home of a blind cook who is always asked to bring dessert! This cheesecake is simple to make and absolutely delicious.

The texture of this cheesecake is creamy and delightful. We had this at Thanksgiving, and I’ll make it to take to a friend’s house next week. And naturally this cheesecake has a story.

If you are telling yourself the story that it’s hard to make cheesecake, please follow my recipe and create a new story for yourself. The filling only asks for 5 ingredients. The options for toppings are limited only by your taste and imagination.

I originally found a cheesecake recipe very much like this one in a cookbook…but I’m never satisfied with leaving things as they are. I use the recipe as a launchpad for my own creation. The diversions I create may be slight, but they make the recipe new.

Before I share the recipe, I’ll give you the considerations for altering the amount of fat and sugar in case you choose to make those alterations.

The way I make it, there is not much sugar. I used half Splenda and half sugar. If you like a sweeter cheesecake, you will definitely want to add an extra quarter cup sugar to rthe recipe below. You can control the fat by choosing fat free, low fat or regular cream cheese.

You can also use egg substitute instead of protein and vitamin rich eggs if you realy feel it’s necessary. Frankly, eggs are a perfect food. Because of the lovely lady hens, I get organically fed, free range, farm fresh eggs. Let me tell you, the flavor difference you get from having the highest quality real whole egg far exceeds any substitution. Plus it’s a healthier dessert.

OK, here is the recipe.

Crust:
I often use premade graham cracker crusts for this, probably because I don’t own a springform pan. You can make 2 full-sized or about 10 individual sized cheesecakes this way.

Preheat oven to 350 degrees.

Crust Ingredients

1 1/4 cup graham cracker crumbs
1/3 cup brown sugar
1/4 cup melted butter

Combine well and press into a 9 inch springform pan. Bake at 350 degrees for 12 minuts.

Filling (remember, your oven is at 350):
1 pound of cream cheese (2 8-ounce packages), softenedbr /
1/2 cup sugar
5 eggs
1 teaspoon vanilla extract
1/4 teaspoon almond extract

Get out your hand mixer and a mixing bowl. Cream the creamcheese. Add the sugar a bit at a time. Mix thoroughly. Add the eggs 1 at a time, mixing well after you add each egg. Finally, add the 2 extracts and give your filling a quick spin to blend.

As you are preparing your food, think happy thoughts and blend in a blessing, prayer or #999 good energy.

Pour cheesecake batter into your crust. Bake 35 minutes. Your perfect cheesecake will have no rifts or fissures in it. (The one pictured was perfect, but of course you can’t tell because of the topping!) If yours has a faultline in it, you might want to cover up with fruit or other toppigns!

Topping ideas
You’ll bake the cheesecake first, then pour the topping over it and bake an additional 5 minutes.

Basic sour cream topping:
1 1/3 to 1 1/2 cup sour cream
1/2 cup sugar
1 teaspoon vanilla extract
Blend well and pour over baked cheesecake, then bake an additional 5 minutes.

Lemon Topping
Add a squirt of lemon juice to the basic topping recipe above.

Loaded topping:
use the basic recipe above, EXCEPT – Instead of vanilla extract, add a teaspoon or 2 of your favorite liqueur, such as Khalua, Amaretto, Irish Cream, Godiva, Frangelico…you get the idea.

Now for some variations on caramel:

Turtle cheesecake:
(remember this is only a variant for the topping. The basic cheesecake is the same).
You can make your own caramel, melt a cup of caramels, or simply buy the caramel dip you often see in the produce section of y our grocery story.

1 cup caramel, melte
1/2 cup ground pecans
1/2 cup chocolate chips
Mix and spread over the baked cheesecake. Bake an additional 5 minutes.

Caramel Machiato Cheesecake:
1 cup malted caramel
1 tablespoon of espresso
Combine, spread, bake 5

Mini Cheesecakes

This is a picture of single serving cheesecakes. I made them in custard cups but you could also use single serve pre-made graham cracker shells if you want.
